GREEN BEANS WITH BACON & BALSAMIC VINEGAR

 

2LBS GREEN BEANS

2 BACON SLICES

¼ CUP MINCED SHALLOTS

3 TBS  COURSELY CHOPPED ALMONDS

2 TBS BROWN SUGAR

¼ CUP BALSAMIC VINEGAR

 

COOK BEANS FOR 2 MINUTES IN BOILING WATER, DRAIN, RINSE WITH COLD WATER.

DRAIN AND SET ASIDE.  COOK BACON UNTIL CRISP.  REMOVE AND CRUMBLE, SET ASIDE.  

ADD SHALLOTS TO BACON FAT AND SAUTE FOR 1 MINUTE.  ADD ALMONDS AND SAUTE

FOR 1 MINUTE.  REMOVE SKILLET FROM HEAT, COOL SLIGHTLY, ADD SUGAR AND

VINEGAR TO SKILLET AND STIR UNTIL SUGAR DISSOLVES.  SITR IN BACON AND POUR

EVERYTHING OVER BEANS.
